The Magic of Just Egg, the Vegan "Egg"cellent Alternative
My new fave breakfast sandwich item
Seen here: Just Egg, used by yours truly, in a lazy, not trying to be authtentic poke bowl. Pickled Asian vegetables. Squash. Rice. Spicy jalapeño slices.
Plant based frozen foods go hand in hand with controversy. You know some people are going to say how it’s the veggie root of all evil in the culinary world. That old joke about, “How do you know someone is vegan / vegetarian? Because he tells you…”
No one does that.
Reality = we stand somewhere. Someone sees us buying an item. We get a lecture. A scolding. Worst ever, a shouting. You force a smile like, “So anyway. I really need to pay for my food today.”
If anything, I might argue the opposite. My eating habits bother people enough for them to tell a total stranger rude things. I don’t tell people anything about their chicken or beef meals.
People might ask me for advice about recipe ideas, or things I might have tried at a relative’s house while growing up, who did meatless on weekdays and had me doing it. Then I will go ahead and share. I don’t show up at the airport TSA, “You know, I don’t eat meat, right?” And they really only want to verify my bag is safe for boarding. 🤦♀️
Just Egg is the item to put hot sauce on in your “egg” sandwich. LOVE. I could it eat it every day if this were the main veggie item of choice at the store.
My pick: TACOS!
Taco Tuesday, or if you live in parts of America and the world, Taco day every day, wanting a vegan* fix? Perfection on a plate.
Toss it into a rice and beans Tex-Mex breakfast bowl. Dump any salsa you like on it. Stuff it into a crispy taco. You can do anything with it. Wear it as a hat. OK, don’t wear it as a hat. 😊
